- 北新橋的牛雜湯是以牛骨慢火清燉,湯汁香而不濁、色淡味濃,加上老闆使用澎湖肉質彈性極佳的黃牛肉下去熬煮,牛肚、牛舌、牛腱子肉等等食材,整碗牛雜湯看起來就是用料豐富新鮮,湯頭清香不火,跟一般牛雜湯加入過雜的牛內臟導致湯汁濁而不香截然不同。另外薑絲也適度地去除了肉的腥味,更讓湯投入嘴不會覺得讓脾胃在一早就負擔沈重。
- 菜包
- 北新橋菜包內餡是韭菜,韭菜香氣十足,菜香從湯汁中緩緩溢出,加上手工的包子皮咬起來很有彈性,不過要趁熱吃,他們的包子皮放冷後比較容易感覺表皮變粗硬。其實站長以前最愛的是肉包,紮實的肉餡和鼓滿包子內部的肉湯,咬下去鮮美的肉汁橫溢好不快哉!不過這幾年肉包似乎感覺不像以前多汁,肉質也沒那麼滑嫩,所以現在我反而比較常吃菜包!
- 辣椒
- 呵呵!又來推薦辣椒了!北新橋的辣椒不是豆瓣醬類型,也不是辣油類型的,簡單的辣椒切塊下去漬在醬油中,應該有摻入一些香料,成了店內免費提供給客人沾著煎餃或包子吃的辣椒。辣椒塊非常的辣,很夠味,常常去的時候你會發現只剩下辣椒醬油,卻沒看到辣椒塊,那是因為都被識途老馬給撈光了,喜歡吃辣的一定得試看看。
