- 小卷新鮮的程度大致分成:
- 小卷第一鮮:活卷
- 小管還在水裡自由游動,可以不停地變色體色,受到驚嚇會變赤紅色及噴墨汁。漁師會把剛捕撈的活卷挑選狀況比較好的小卷,第一時間養在活魚倉裡(而且也不是每支進活魚倉的小卷都能夠保證是活的哦!此類的活卷如此珍貴的原因)
- 小卷第二鮮:透明卷
- 當然就是身體呈透明色狀,這等級的小卷雖然也是算活卷,但如果把他放入水中是不能再游動且無法存活,不過新鮮度還是足以拿來做生魚片,此等級的小卷也算是高價位。
- 小卷第三鮮:白底變色卷
- 身體以鮮白色為底,紅色或橙色為變色的顏色,在生鮮業的眼中已不算是活卷的等級了。
- 小卷第四鮮:白底加上赤紅色
- 赤紅色的變色狀況是很遲緩的(有時是沒辦法變色的),會產生這原因,是因為小卷受到長時間的離水及高溫照成灼傷,眼睛還是透明的。
- 小卷第五鮮:已不鮮
- 這就像一般的平價大賣場那種,死白或死紅色的.而且雙眼也已失去透明度的小卷,抓了手上會留下一些腥味的小卷
- 小卷第一鮮:活卷
- 小管價位等級分類:
- 小卷是非常敏感的水產品,只要手抓到牠,就可能灼傷牠,所以一般在攤販挑選透明的小卷時盡量忍住自己的雙手,少去抓牠們,不然可是會被老闆白眼哦。如果真的要抓,盡量抓脖子比較不會灼傷到小卷的身體,因為受灼傷的小卷新鮮度會大幅度的下降。
- 小管的時價變動非常之大,而且又以體型的大小及鮮度來訂價。光以每日捕穫量來議價:同樣的透明卷,最大可能會差到每公斤1-200元不等,這原因很簡單,因為這些價格主要來自由漁市埸的中盤商,如果當天的小卷供應量不足以供應所有中盤商的需求,此時每個中盤商就會以高價先把夠格的鮮卷鮮買下來,因此才會有這麼大的差價。
- 再來是以鮮度及體型來訂價:同一天的小卷會依鮮度會首選,再來是依體型來訂價,通常是透明大型卷(約25CM以上的)會比透明中型卷(約18~25CM)貴一個層次,而以鮮度來訂價的話大概是可說中型透明卷的價格可能會等於大型白底變色卷,其他都是以此類推的議價法,而每一層次的單位.可能差個20~50不等。所以漁市批發場的每日單價,可以貴到每公斤500或600,而說便宜可能不用100元也買得到,就是那種賣相差,可能是脫皮的,或不到10CM的!。

- 澎湖人小管美食料理方式大約包括:燙熟後整隻享受原味、燙熟後切片沾沙拉或醬油、小管沙西米、曬成小管干烹煮各式料理、小管切片炒菜煮湯可以讓湯頭更鮮甜、製作成鹹小管配飯,澎湖小管產量多,吃小管的方式還真的不少!
- 一般遊客可以在夏季五月至九月期間,每日上午自行前往馬公市區北辰市場或第三漁港魚市場選購小管回住宿地方料理,或到澎湖各大餐廳用餐時指名小管料理,一般餐廳小管料理方式為小管沙拉。
- 如果要吃現撈的小管,享受在海上現抓小管現吃的鮮度與脆度,則可以參加夜釣小管的活動,享受悠閒的夜海巡航並享受小管美食。
