  • 捕捉方法
    • 主要以流刺網(俗稱:浮網)及延繩釣(俗稱:放滾)二種,以鮮度及魚價來說,放滾的土魠魚都常都會比較新鮮,魚體外形較美,賣相佳,相對的價格較高;而流刺網的土魠通常會因為船家太晚去收網而稍稍失去其鮮度,另一點是在魚頭或魚身上會有一圈被網子套住的傷痕,因此賣相會差了一點。
  • 選購注意
    • 初階版:
      • 基本的挑魚要件就是看眼,看鰓,看外觀,
    • 進階版::
      • 挑選土魠魚除了基本三樣重點外,魚身的軟硬度必須考量在內,土魠魚的特性就是越新鮮的魚其魚身越硬,之後會因為鮮度的下滑而漸漸變軟,這是內行人才知道的!太軟的魚身表示這尾魚已經冰好幾天了,或者是捕上來時有摔到,太軟的魚身在輪切的時候很有可能產生魚片切不平或魚肉被擠壓出來,所以挑選時不仿用手摸摸魚背或魚腹,決定它的價值。
    • 另類撿便宜奇招:
      • 反向挑魚,從別人眼中不好的魚裡去挑自己心目中的好土魠,阿忠說我們捨去第一層次的貴魚,不選「放滾魚」,我們從「浮網魚」下手,再來就是我們再放棄外觀,我們選擇頭開掉或是尾巴開掉的土魠,重點是我們放棄外觀後,要特別注意魚身,魚腹,千萬不可以過軟,以及魚鰓不可以太白,挑到之後就可大膽的跟魚販殺價啦,說牠賣相又不好便宜賣你吧!對於此方法,提前是自己要有十足的挑魚把握,不然很有可能會因經驗不足而挑到真的不好的魚哦!所以請依自己的能力考量挑土魠魚的方法!!
  • 購買新鮮土魠的地點
    • 馬公魚市場(每日上午5時至8時)
    • 本辰市場(每日上午6時至12時)
    • 各村落走動式魚市場(注意各村裡的廣播器放送頭)
  • 大致價格分析(以每尾魚的重量來分):
    • 6KG以下通常在320以下
    • 7-9KG約在330~450
    • 10-13KG約在400~600
    • 14-20KG正常價格約在每650-800
    • 20KG以上,這是少見的土魠,在澎湖漁市場並不是天天都可能出現的
    • 以上所有價格以每公斤計算,每日的魚價會變動,因為魚市場就是供需原理,如果連日的壞天氣,就可能出現瘋狂高的魚價,反之連日的過剩漁穫,當然很有可能10KG的土魠每KG只要350就買得到,機率好比中樂透一樣!
    • 另一點就是鮮度也會引影單尾的魚價,以及捕捉方法「浮網」及「放滾」的差價,還有外形,賣相,肥瘦,魚肚內有無食物等等,這些都是影響單尾魚價的因素。所以同一天的魚價可能有人會說他買到300元的,但同樣重量等級的魚,也有近400元的魚價,只要價格實在,保證比300那尾更肥更鮮更美味,正所謂一分錢一份貸這句話在澎湖的土魠魚身上真是形容的淋漓盡致啊!!
  • 澎湖在地道地料理方式
    • 香煎:
      • 抹上鹽巴放置30分鐘後下鍋油煎,加上胡椒粉或淋上檸檬汁,一筆最愛這味。
    • 煮湯或麵線:
      • 放入澎湖麵線及澎湖絲瓜煮成道地的冬季澎湖土魠麵線
    • 風乾後香煎:
      • 抺上鹽巴,吊在風大的地方風乾後,再下鍋香煎
    • 漬味增後碳烤或進烤箱烤:
    • 頭尾做砂鍋魚頭:
      • 把頭尾裹粉炸過後當砂鍋魚頭主菜,再加入其他火鍋料,有些人會連土魠骨也吃進去哦,因為土魠魚骨本身就比較軟一點。
  • 饕客門路
    • 若要購買新鮮土魠,可至魚市場或北辰市場購買後回家料理
    • 馬公海鮮餐廳用餐,亦可詢問老闆有無時鮮的土魠料理,餐廳最普遍的做法是油煎或沙鍋土魠魚頭,但請務必詢問價格
    • 土魠魚羹麵,50塊台幣就可以飽餐一頓又可以品嚐澎湖土魠,最有名氣的就是文康街上的香亭土魠魚羹
