丁香干貝醬美味可口 好個下酒菜
(記者報導)孤懸的澎湖離島,因四面環海,以盛產海鮮聞名,由於海鮮素材取得容易,新近也吹起干貝海鮮醬風,利用本地盛產的丁香、蝦米,搭配越南進口的干貝及台灣本島引進的辣椒,製作成美味可口的丁香干貝罐頭,成為喜好小酌的民眾必備良品,連台灣本島民眾也慕名跨海而來訂購。
經營蚵仔麵線業者楊淑媛,由於經常前往漁市場購物,眼見豐富的海鮮資源,興起嘗試自行製作干貝海鮮醬的念頭,原本僅供自己嚐鮮,部分則送給友人品嘗,不料廣受歡迎,因此納入生產體系,意外開創事業的另一春,並陸續開發出香辣小卷、丁香罐頭。
由於澎湖為海鮮生產王國,楊女士以丁香、小蝦米為原料素材,並堅持嚴選幼丁材料,同時丁香五月份進入禁捕期,必須先行購買囤貨,才能因應市場的需求,目前每日製作四百罐,但過年期間旺季仍供不應求,而越南進口的干貝,則豪爽的以塊狀製作,不同於台灣只用干貝絲,滿足老饕口感的需求。
製作的過程,則油炸相關材料十分鐘,主要是讓乾料水分濾乾,至於丁香干貝的辣度,則取決於使用的辣椒種類,大辣使用的是朝天椒、小辣則用普通大辣椒,但辣椒最怕颱風過境,價格飆漲會將近八倍,因此控制成本最重要,隨後則以真空包裝成罐頭,冷藏期限可達三個月、冷凍則可達九個月,不論拌麵、炒菜等口感十足,具有海洋風味。
