- 鹹粥(魚粥)是阿嬤的招牌菜,一年四季會依照時令選定不同的好魚做為鹹粥的主要食材,春夏的嘉誌魚,秋天的竹午魚或隆冬之後的土魠魚,不選用進口魚種就是為了確保澎湖鮮魚粥的口碑與味道。阿嬤的鹹粥可以加個油條下去吸汲鮮魚湯頭,或打個荷包蛋豐富配料,小小的澎湖鮮魚塊浸出鮮甜清淡的魚粥湯頭,加些胡椒粉與阿嬤特製的油蔥更有香氣。
- 蓋毛毯的地瓜稀飯:
- 阿嬤的地瓜稀飯是地瓜剉成絲下去煮,整鍋稀飯黃白色調融合地十分美味,地瓜稀飯煮熟後如果繼續滾沸會讓稀飯變成太過黏稠,所以阿嬤在稀飯的桶子上覆蓋上一條厚厚的毛毯保溫,可以確保第一次起鍋後的稀飯口感又可以保溫,這是一筆第一次看到蓋毛毯的稀飯,好像滿舒服的!阿嬤也準備了各式小菜可以搭配稀飯,豆腐、鹹魚、蔥蛋、醬瓜等等。
- 加入日本味精的大骨湯:
- 用作鍋燒麵及鹹粥湯底的大骨湯,除了阿嬤每日以大骨熬煮外,阿嬤還秀了一下她下重本的日本味精,台製味精一大包50,阿嬤秀著手中一小瓶300的日式味精,大骨湯頭都是加入這款日式味精,除了甘甜以外也比較健康,且不容易口乾舌噪,讓客人吃的美味健康。
- 自製油蔥:
- 澎湖店家非常喜愛以油蔥”放香”湯頭,阿嬤的鹹粥或鍋燒麵也不例外,不過阿嬤不從市面上購買油蔥,自己不辭辛苦繁雜的程序製作油蔥,從切、洗、風乾、炒、調味約需幾個小時的功夫,不過阿嬤講究油蔥的香氣與品質,還是堅持自己製作油蔥,所以阿嬤的油蔥看起來特別濃育有香氣,放入湯頭內也更能增添湯頭香氣。
- 附註:
- 阿嬤鹹粥內的各式料理大多是客人點餐後,阿嬤一個人當下烹煮的,有時候客人多會比較慢,為了確保端上桌的是熱騰騰現煮的佳餚,阿嬤希望大家體諒一下,有時候可能得小小等待一下,等待一碗好吃的魚粥。
