    • 該店最出名的莫過於嘉誌魚麵了!這碗嘉誌魚麵讓老闆娘跟我聊天聊了好久。她說,她的嘉誌魚麵幾十年來都是固定跟熟識的魚撈業者合作,當魚撈業者捕撈到新鮮活跳跳的嘉誌魚後,馬上以完美的低溫冷凍技術急速冷凍,在15天內送回赤崁賣給她做成嘉誌魚麵。但由於成本逐年增高,一碗嘉誌魚麵現在要賣70元,一些不懂漁業生態的菜鳥遊客一聽見「冷凍15天」、「一碗麵70元」之後便打退堂鼓,有些甚至找老闆娘吵架!老闆娘不堪其擾,乾脆不在菜單上寫價格,反正懂得門路向她買麵的,一定是內行人!
    • 一碗嘉誌魚麵大概有7、8塊魚塊,肉質結實,吃得出新鮮的味道;湯頭是鮮魚湯,是用嘉誌魚一起煮的,不會太鹹或太油,嘉誌魚的精華全都在這碗湯裡,可別把湯剩下來,浪費了這碗精華。
    • 店內所賣的樣式不多,大多以嘉誌魚製成的麵食為主,另有一些老闆娘親製的滷料可以作為佐食。

    • 所謂的嘉誌魚是澎湖近海一種大型魚類,每年春季還有夏初是嘉誌魚最肥美的季節,一台斤的市價大多在400至600間滑動,屬於高價的魚種!嘉誌魚的特色是皮很厚實,因此魚油很豐厚,魚肉本身很結實有彈性,肥美的嘉誌魚肉甚至吃起來像雞肉不像魚肉,澎湖人大多拿來煮湯跟煮麵,湯頭特別甜!赤崁嘉誌魚麵就是保留魚湯傳統的做法下麵,熱湯和魚塊的鮮甜美味都是高檔的海鮮美食!

    • 這是一家40年老店,剛開始是由老闆娘的父親在赤崁碼頭旁賣各式麵食,近年他身體狀況不佳,當時身在台灣的老闆娘毅然決然的從台灣回澎湖開始幫父親撐起生意;雖然老闆娘之前長年跟隨父親,早已學得一手煮麵功夫,但去台灣而中斷的光陰卻怎麼補也補不回來,老闆娘告訴我,自她回澎湖後已經賣了7年,但前三、四年都跟隨在年邁老父旁重新學習煮麵的技巧,很有心吧!
    • 早期這家店最主要的客源當然是當地人,因此菜色花樣、變化不多,一切力求簡單新鮮為主。後來赤崁碼頭因北海觀光交通站而興盛,使得店內漸漸多了不少遊客。有些遊客在吃過嘉誌魚麵後,回台灣爭相走告,去年甚至有大學生遊客來到店內指明要吃嘉誌魚麵,老闆娘很自豪的說,幫她打免費廣告的可是台大學生呢!
