- 垵米屬於秋、冬魚種,尤其是每年中秋過後一直到農曆十月,這期間是垵米最肥美、可口也是產量最豐富的時候。

- 水煮垵米麵線魚湯,因澎湖手工麵線本身就有鹹味,垵米魚新鮮的話,無須任何添加味精佐料,可享受垵米的原味,麵線湯鮮甜。
- 加點水、蔥花和些許醬油下去蒸熟,也是品嚐原味,有些饕客不愛魚腥味,適合這種煮法。
- 吃的技巧:
- 可以由頭往身體慢慢吃,垵米魚頭骨頭甚多,但是慢慢吸慢慢咀嚼,可以品嚐到更鮮美的魚味,之後才大口大口吃垵米身體的魚肉,大飽口福。
